Creamy Potato Salad Recipe for Texas Lake Weekends and Vacation Rentals
A good potato salad belongs at more than just a backyard cookout. It also fits right in at Texas lake weekends, beach rentals, cabin stays, RV trips, family reunions, and picnic-style getaways when everyone needs an easy side dish that goes with just about everything.
This creamy potato salad recipe is simple, classic, and made without mayo, which makes it a little different from the usual version. Serve it with burgers, brisket, sandwiches, fried chicken, or barbecue for an easy vacation rental side dish that feels homemade without turning your trip kitchen into a full-time job. Because apparently even on vacation, people expect meals.
This recipe has been made for years in my family as far back as I can remember. It's the only way my mom has ever made it. It's because she never has liked mayonnaise in her potato salad and I am the same way.
I not sure where she got this recipe or if she just made it up on her own but to me, it's the best.

A Travel Prep Tips
If you want to make this potato salad for a trip, here are a few ways to keep it simple:
- Make it before you leave if your drive is short and you can keep it chilled.
- Store it in a sealed container inside a cooler with ice packs.
- Pack serving spoons, paper plates, napkins, and disposable bowls if eating outdoors.
- Make it at the vacation rental if you have basic cookware.
- Serve it with easy mains like burgers, sandwiches, barbecue, fried chicken, or grilled hot dogs.
- Keep it chilled until serving, especially during warm Texas weather.

Food Safety Travel Tip
If you are taking potato salad on a road trip, keep it cold in a cooler with plenty of ice packs and refrigerate it as soon as you arrive. Do not leave it sitting outside in hot weather for long periods. For longer drives, it is usually better to make it after you arrive at your vacation rental, lake house, or cabin.

Interesting recipe...I'm going to try this soon. You do serve this cold correct? It sounds like it should be hot!!
It depends on the person. I don't like anything cold, so I eat mine hot or heat it up. I have family that will eat it hot or cold. So it's just a personal preference. Let me know what you think of it after you try it 🙂
